Mardi Roberts of Ridgeview Wine Estate presented four of their Sussex sparkling wines that chef Stefan Söderholm matched to a fabulous dinner again created with fresh ingredients from local producers: pike perch and roe from the lake, organic vegetables, herbs and fruits from Läckö Slott garden, artisan breads and beef.
Part of International Chef Exchange is getting an insight to the culture, local foods and producers in the exchange country. During the visit to Sweden Chef Jimmy Gray of Jeremy’s Restaurant at Borde Hill, East Sussex, UK, created a Sussex-themed meal at Sjöboden Restaurant in Spiken near Lidkoping, as part of International Chef Exchange. Swedish chef Christofer Johansson, will come to the UK in turn to present a meal representing his home region of Läckö-Kinnekulle at Jeremy’s Restaurant in September this year.
