Part of International Chef Exchange is getting an insight to the culture, local foods and producers in the exchange country. On this trip it included checking out the local market in the city centre of Lidkoping just across the bridge from the Hotel Stadt where the ICEx team stayed. On this visit to Sweden Chef Jimmy Gray of Jeremy’s Restaurant at Borde Hill, East Sussex, UK, created a Sussex-themed meal at Sjöboden Restaurant in Spiken near Lidkoping, as part of International Chef Exchange. Swedish chef Christofer Johansson, will come to the UK in turn to present a meal representing his home region of Läckö-Kinnekulle at Jeremy’s Restaurant in September this year.
